Grilled Hatch Chile Wrapped Shrimp Recipe

HATCH CHILES are in season right now through October! I recently picked up some for a recipe at Northgate Gonzalez Market. You can buy them by the 25 pound bag or individually. They are mild, long and curved, have good flavor, and great for stuffing. In August, select Northgate Markets will host Hatch Chile Roasting events on the weekends. My chef sister, Leyna, helped me with this recipe. Doesn’t it look amazing? It is an easy recipe that is very flavorful and will be sure to impress. Get the recipe below!

Hatch Chile Wrapped Shrimp Recipe

Yields 4-6 servings.

Ingredients

INGREDIENTS:

  • 4-6 each Hatch Chiles
  • 1 lb Oaxaca Cheese you can also use Mozzarella
  • 1 lb Shrimp peeled and deveined
  • 1 each roma tomatoes diced
  • 1 each shallots sliced
  • 1 avocado diced
  • 1 lime
  • 1 bunch cilantro
  • 5 cloves garlic fine chopped
  • kosher salt and pepper as needed
  • Olive Oil as needed

Instructions

INSTRUCTIONS:

  1. Split open the Hatch Chiles and drizzle with olive oil.
  2. Grill the chiles until the skin is charred.
  3. Transfer to a bowl and cover with plastic wrap for a few minutes until the skin releases, and it’s easy to peel.
  4. Once removed, stuff them with the Oaxaca cheese (you can also substitute with Mozzarella cheese) and put them back on the grill until the cheese melt.
  5. Combine diced avocados, tomatoes, and half of the chopped garlic, season with salt and pepper. Set aside.
  6. In a large sauté pan, add olive oil, shallots, and the rest of the garlic and tomatoes. Cook for about 5 minutes. Add shrimp, season with salt and pepper, and sauté until pink.
  7. Put the grilled Hatch Chiles onto a plate and top it with the shrimp mixture, layered with the avocado mixture, lime juice, and chopped cilantro.
  8. Done. Ready to serve.

We thought the recipe was simple, easy to make, and delicious. It is always great to work with fresh seasonal ingredients and the Hatch Chile is such a versatile chile that it can even be baked inside bread with cheese. (We found some in their bakery!) I was definitely inspired shopping with my sister, because they have everything, and it’s fun to walk around sampling food!
