INGREDIENTS:
- 4-6 each Hatch Chiles
- 1 lb of Oaxaca Cheese (you can also use Mozzarella)
- 1 lb Shrimp (peeled and deveined)
- 1 each roma tomatoes (diced)
- 1 each shallots (sliced)
- 1 avocado (diced)
- 1 lime
- 1 bunch cilantro
- 5 garlic cloves (fine chopped)
- kosher salt and pepper (as needed)
- Olive Oil (as needed)
DIRECTIONS:

We thought the recipe was simple, easy to make, and delicious. It is always great to work with fresh seasonal ingredients and the Hatch Chile is such a versatile chile that it can even be baked inside bread with cheese. (We found some in their bakery!) You can find all your Hatch Chile recipe ingredients at your nearest Northgate Market location! I was definitely inspired shopping with my sister, because they have everything, and it's fun to walk around sampling food! From 8/06 to 8/28, Northgate have roasting events on the weekends at select locations. You can find the calendar here>> bit.ly/2b1EJ3D. Find a Northgate location near you here>> www.northgatemarkets.com/en-us/our-stores/.

Saturday, August 13 (7:00 AM - 2:00 PM)
Sunday, August 14 (7:00 AM - 2:00 PM)
- Split open the Hatch Chiles and drizzle with olive oil.
- Grill the chiles until the skin is charred.
- Transfer to a bowl and cover with plastic wrap for a few minutes until the skin releases, and it’s easy to peel.
- Once removed, stuff them with the Oaxaca cheese (you can also substitute with Mozzarella cheese) and put them back on the grill until the cheese melt.
- Combine diced avocados, tomatoes, and half of the chopped garlic, season with salt and pepper. Set aside.
- In a large sauté pan, add olive oil, shallots, and the rest of the garlic and tomatoes. Cook for about 5 minutes. Add shrimp, season with salt and pepper, and sauté until pink.
- Put the grilled Hatch Chiles onto a plate and top it with the shrimp mixture, layered with the avocado mixture, lime juice, and chopped cilantro.
- Done. Ready to serve.
